Ramen pic… for my buddy Andrew, as requested.
Broth made with smoke turkey leg, ramen seasoning, miso, szechuan peppercorns, fresh and dried peppers. Smoked a pork shoulder steak in a stovetop smoker, previously brined and marinated in soy, garlic, and hoisin (maybe a few other things). Added the drippings to the broth. Used some reserved marinade to cook up some greens (yu chou and kale), which were added to the broth. Poached an egg in the broth. Added off-the-shelf ramen, maggi, soy sauce, sriracha, chile garlic, salt, and pepper.
